This classic lemon curd recipe uses equal quantities of fresh lemon juice and sugar, so that it's bright and tart. It couldn't be simpler to make: Just whisk the ingredients over moderately low heat until the first bubble appears. Lemon curd is perfect on scones, on toast, swirled into yogurt, or dolloped on a Dutch baby.
