Canned peaches are NOT suitable for this recipe! They make the filling far too liquid. The author instructs the reader to use two egg roll wrappers to prevent the filling from leaking out when frying; however, this method didn't always work. In addition, the two wrapper method caused the peach cobbler egg rolls to be cooked incompletely. While the outer wrapper fried up nice and crispy, the inner wrapper was nearly raw, which made it quite chewy - it was like chewing on shoe leather! The author also failed to provide a recommended temperature for the frying oil. I will attempt this recipe at least a couple more times implementing my own changes to see if there's an improvement. I will report back here with my findings.
