Vegetarian Grape Leaves
A juicy vegetarian dish made in one pot that will fill you up, but leave you wanting more.

Ingredients

1.5 jarspickled grape leaves

2onions
medium, chopped

6tomatoes
medium, diced

2 bunchescurly parsley
chopped

1 tablespoonsalt

1 tablespoondried mint

2lemons
juiced or 2 teaspoons citric acid

½ cupolive oil

3 cupsshort grain rice

2 teaspoonsseven spices
all spice

0.5 x ¼ teaspoonseven spices
all spice

salt
to taste

½ cuplemon juice
or 1/4 teaspoon of citric acid

Instructions
Step 1
Soak grape leaves in water for 15 minutes, then place in strainer.
Step 2
Mix the stuffing ingredients then place in another strainer and over a bowl to collect the juice. Taste it and adjust salt if needed.
Step 3
Get a grape leaf and cut the stem off. Lay it flat on a hard surface, rough side facing up. Fill with about ½ tablespoon of stuffing.
Step 4
Fold from the right side of the leaf, then left side and begin tightly rolling. Place in the pot.
Step 5
Tip: Lay about 6 leaves at once and place filling on each and roll one by one for quicker results.
Step 6
Once finished, strain the juice of the rice mixture and add over the rolled leaves in the pot.
Step 7
In a bowl add the “broth mixture” ingredients listed above then mix, taste, and pour over the rolled leaves placed in pot.
Step 8
Set pressure cooker on rice mode for 18 minutes.
