Delicious!! A new favorite healthy side dish!
*** Did not include green onion cause I didn't have it. Used cilantro instead of parsley. Added purple cabbage and a little bit more salt & black pepper towards the end of mixing & tasting.
The dressing is so delicious & mustardy+lemony. Make sure to use a good quality Dijon mustard!! I know this is going to taste incredible once it sits in the fridge overnight. I can't wait to taste it tomorrow 😋.
I made this as a meal prep side dish. Such an easy & flavorful way to get more carrots (and purple cabbage) into your diet!
You can also add a sprinkle of crushed red pepper flakes to take it up a notch & give your tongue a spicy tingle.
