Ingredients: 1 cup shredded carrots; 2 tablespoons butter (unsalted); 1/3 cup brown sugar (packed); 1 ½ teaspoon cinnamon (ground); ½ teaspoon ginger (ground); ¼ teaspoon cloves (ground); ½ teaspoon nutmeg (ground); 5 oz cream cheese (softened); 1 can sweetened condensed milk (300 mL, or 14 oz by weight); 1 teaspoon pure vanilla extract; 2 cups heavy whipping cream (cold); ½ cup toasted pecans (chopped (optional)); 6 golden oreos (crushed (or other similar vanilla cookie))

This carrot cake ice cream is creamy, tastes exactly like carrot cake, and you don’t need an ice cream maker! It’s no churn and is full of that warm, fragrant, carrot flavour that a carrot cake has. I added golden oreos and toasted pecans but you can add chocolate chips, raisins, and/or walnuts if you prefer.
