Instructions

Step 1
Preheat oven to 350 degrees and line baking sheets with parchment paper

Using a stand mixer or a hand mixer cream butter and sugar

Beat in the egg, then mint extract, then food coloring until well combined

In a separate bowl sift or mix together flour, baking soda, baking powder and salt

Form dough into 22-24 balls and place on baking sheet at least 2 inches apart

Bake for 9-11 minutes. Let cool on pan for 5 minutes before transferring to cooling rack
