Sheet Pan Pesto Chicken Dinner

So easy! No reason to roast the tomatoes as long as this calls for though. I’d put them in with the chicken next time.

I don't usually like pesto and I dont know why I used it in this recipe knowing that. Lol. I tried it anyway and the flavors of the roasted tomatoes and carrots and the mozzarella cheese really took the pungent flavor of the pesto off. I really enjoyed this! Instead of using salt and pepper for everything, I used slap ya mama Cajun seasoning for the veggies and garlic powder for the chicken. Very, very good and easy. It made my whole house smell delicious right from the veggies roasting.
