The magic starts at the bottom (which eventually becomes the top): Thinly sliced apples are arranged like a crown in the pan, then covered in a buttery brown sugar–cinnamon caramel that's enriched with boiled cider, the liquid gold of the apple world. The cake itself is a simple stir-together batter, fragrant with spices and studded with chopped apples. Once baked and flipped, the fruit glistens, and the caramel seeps into every crumb. For a touch of extra decadence, additional caramel is poured over the top of the Apple Upside-Down Cake before serving.
