Ingredients

1chicken
whole roasted or rotisserie, shredded, not too shredded! I like to keep it chunky

0.5red onion
medium, finely chopped and rinsed in cold water

2celery stalks
large, sliced, celery leaves reserved
4medijool dates
chopped

¼ cupparsley
chopped

¼ cupdill
roughly torn

½ cupalmonds
sliced, toasted

1lemon
zested, and juiced

¼ cupmayo

¼ cupplain greek yogurt

1 Tbspdijon mustard

1 Tbspvinegar
any light, I used celery vinegar but rice or white wine vinegar works too Or even more lemon juice

kosher salt
to taste

pepper
to taste
Instructions
Step 1
Add everything to a large bowl and gently mix to combine. You want to combine everything without breaking up the chicken too much.
Step 2
Cover and refrigerate until chilled, at least an hour. Serve as a sandwich, with crackers or however you’d like :) I like to top it with some celery leaves and fresh pepper as well!
