Ingredients
4 servings
1 x 15 ozchickpeas
can, organic, drained & rinsed
1 tablespoonolive oil
¼ teaspoonsalt
¼ teaspoongarlic powder
⅛ teaspoonblack pepper
12 ouncespita chips
1 cupcucumber
diced
⅓ cupred onion
diced
1 cupgrape tomatoes
halved
½ cupfeta cheese
¼ cupolives
sliced, optional
⅓ cuptahini
1juice of lemon
large
salt
to taste
pepper
to taste
2 tablespoonsfresh parsley
chopped, for garnish
Instructions
Step 1
Preheat oven to 400 degrees and line a baking sheet with parchment paper
Step 2
Toss the chickpeas with olive oil and spices. Spread evenly on baking sheet and bake for 20 minutes, tossing midway *
Step 3
In a small bowl whisk together tahini, lemon, and salt & pepper to taste
Step 4
On a large serving dish assemble a base of chips then top with the cucumber, onion, tomatoes, feta, olives and crispy chickpeas. Drizzle tahini sauce over top and finish with fresh parsley
