This Sheet Pan Sausage & Root Vegetable Scramble was incredible!
Super easy to make with all the prep work done.
My 10 year old son inhaled it and said was the best I ever made! 🥰
I was going sub with radishes, but they were too far gone in my crisper. The beets I couldn't reach at the store...so I added 2 carrots.
I also used the sausage that comes already frozen ( Marc Angelo - a Canadian brand) and they were absolutely perfect for this meal. 👌
Note: I have an apartment sized oven. I actually had to do this with 3 sheet pans. First, to bake the sausages from frozen for 45-50 mins @400, then have those rest while the two veggie sheet pans were on two different racks for 10 mins each @450, then threw on the sliced sausages and switched the racks and put back in for another 10 mins.
Sounds like a lot of work but it was just sheet pan math.😆
