There’s tomato sauce and then there’s Grandma’s version. Traditional and dependable, it has a lovely sweetness from the tomatoes and apple, and a gentle spicy tang. Pour it over everything, from pies to snags and your morning eggs. How to make Grandma's tomato sauce: key tips Soaking the onion and tomato together overnight helps to reduce the sharpness of the onion, giving it a milder taste, while enhancing the tomato's flavour, so try not to skip this step. As there is a lot of sugar added all at once, it’s better to warm it before adding it to the pan. You may think that warming the sugar is a little odd, but warm sugar will dissolve more quickly and the temperature of the sauce will remain constant as it cooks. Rapid temperature fluctuations can lead to a less desirable texture. After adding the sugar, be sure to stir the sauce frequently so that the ingredients cook evenly and nothing catches on the bottom of the pan and burns, which would ruin your sauce. You can use a hand-operated mouli to puree your sauce, if you have one, which will make it lovely and smooth. You could also use a hand blender to whiz the mixture in the pan until you reach your desired consistency. The recipe makes around 4 litres of tomato sauce. Apples add a delightful sweetness and tang to this sauce. You could choose Granny Smith or Pink Lady, or a combination of the two.
