Spicy Tomatillo Salsa

This is my dad's recipe that I recently learned how to make. It's an easy way to make delicious tomatillo salsa! You can use less peppers for a more mild flavor. This recipe is spicy!

Step 1
Bring about 4-6 cups of water to a boil, enough to let all of the ingredients boil with room to stir around, in a medium sauce pan. Peel and chop the onion into about 2 inch pieces and boil for about 5 minutes or until somewhat soft, stirring occasionally.

Add jalapeños and serranos and continue to boil for about 5 more minutes.

Add in tomatillos and garlic and continue to boil for about another 5 minutes. Don't add in all the ingredients at once as they each take a different amount of time to cook. If they're all added simultaneously the tomatillos will be over cooked and mushy and won't strain well.

Using a lid or strainer, strain the water from the pot but keep everything else inside.

After all of the water has been removed, use an immersion blender in the pot to blend ingredients together into a smooth salsa consistency. Add salt while blending and taste occasionally.

Optional: If you don't have an immersion blender you can use a regular blender. Add in about a quarter of the ingredients from the sauce pan into the blender and pulse until smooth. Continue adding to blender until everything is blended together. This ensures that there will be no larger chunks left.

Add in cilantro and lime and blend in for a few extra seconds until everything is well mixed.

THIS RECIPE IS VERY SPICY! I recommend using half the amount of jalapeños and serrano peppers if you are unsure about how spicy you might like it or if you know you prefer a more mild flavor. You can also adjust the peppers to your own liking, serranos being much spicier than jalapeños. Removing some of the seeds from the peppers before boiling can also create a more mild flavor. There's always room to play around with this recipe!
