Instructions
Step 1
Gather bananas that are starting to get ripe but are not yet super spotty or overripe. Ripe bananas will make sure these pops are sweet but you still want them to hold their shape. Cut each banana in half.
Step 2
Insert a popsicle stick into the bottom of each banana half.
Step 3
Line a baking sheet with parchment paper and lay the banana pops onto the parchment paper. Freeze for 2+ hours.
Step 4
Heat the chocolate chips and coconut oil in a small cup until melted. Mix until smooth. Hold the popsicle stick and dip the banana straight into the cup.
Step 5
The chocolate will harden pretty quickly so hold make sure to add your sprinkles shortly after you dip it. Hold the banana pop upside down until the chocolate hardens and then return it to the parchment paper. Continue this process until they’re all chocolate coated and sprinkled.
Step 6
Enjoy immediately or freeze until you’re ready to eat!
