Instructions

Step 1
Follow steps 1-6 of my Pandesal Recipe. You should end up at the point where the first proofing is done and you’re ready for the second proofing
Step 2
Cube the whole can of Spam, and slice the green onion.
Step 3
Tip your dough out onto a lightly floured work surface. Fold in the Spam and green onion. Using your hands, massage the dough so that the ingredients are evenly distributed.
Step 4
Place the dough in an oiled deep baking dish. I recommend using a glass or enameled dish. Liberally sprinkle shredded cheese to your taste. Let proof for at least 1 hour.
Step 5
When done proofing, cover with foil and bake for 25 minutes at 350º F. Remove the foil and bake for an additional 20 minutes. Keeping the foil on for just over the first half of the bake ensures the cheese doesn’t burn. Removing the foil will give the bread a little bit of a crust.
Step 6
When finished baking, remove from oven and let cool. Serve and enjoy!
