Tortellini alla Vodka Soup

If you love pasta with vodka sauce then this soup is for you! The broth is a creamy vodka sauce with italian sausage and cheesy tortellini.

Ingredients
6 servings

1 Tbspolive oil

1 lbItalian Sausage
sweet or hot, remove from casing if using links

1yellow onion
diced

4cloves garlic
minced

1 tspRed Pepper Flakes
optional, more or less to taste

salt
to taste

pepper
to taste

1 TbspChili Paste
Calabrian, I used the Italian Bomba sauce from Trader Joe's, more or less to taste

3 Tbsptomato paste

¼ cupvodka

28 ozCrushed Tomatoes
I used 1 can of Crushed Fire Roasted Tomatoes

3 cupschicken broth

10 ozCheese Tortellini

1 cupheavy cream

Fresh Basil

Grated Parmesan
to serve
Instructions
Step 1
Heat olive oil in a Dutch oven or large pot over medium heat. Add the italian sausage and break it up into small pieces with a spoon. Cook for 3 minutes then add the diced onion. Cook for 4 minutes, until the onions are softened. Add the minced garlic and cook another minute.
Step 2
Optionally add red pepper flakes and season to taste with salt and pepper.
Step 3
Add the calabrian chili paste and tomato paste. Stir to combine and cook for 5 minutes until darkened in color. Pour in the vodka to deglaze the pot. Scrape any stuck bits on the bottom of the pan with a wooden spoon. Let the vodka cook off for a couple minutes.
Step 4
Pour in the crushed tomatoes and chicken broth. Bring to a boil then simmer for 10 minutes.
Step 5
Add the tortellini and simmer another few minutes until they are cooked through. Finally, pour in the heavy cream and stir to combine.
Step 6
Divide into bowls and serve with fresh basil and grated parmesan cheese.
