Creamy Tomato and Spinach Pasta

Easy and tasted good

I like this recipe because it doesn’t require heavy cream, which I seldom have but always have Parmesan and cream cheese. It’s easily adaptable. I like to use pasta water for the 1/2 cup called for.

I didn't have gluten free penne so I used gluten free rotini instead. Turned out great. Kind of more tomatoes than I would've liked.

I doubled the recipe, added 1lb of ground beef, used crushed tomatoes instead of diced, used rotini because I didnt have penne, and also added garlic powder, smoked paprika, onion powder, and Italian seasoning. Delicious and the kids ate it!!

Instead of canned tomatoes I tried this recipe to use up some grape tomatoes (cut in half). The perfect amount of creamy comfort food and some great spices additions (especially the crushed red pepper).

First time I made it without meat, just like it's in the recipe and it was tasty, but as meat lover I really missed it there... so now, the second time, I added some chicken and it is delicious! I really recommend this recipe 😙👌 (also I didn't have penne so I used fusilli...)

Tastes like penne Rosa from Noodles and co. I skipped the peppers so my kids would eat it but put it in my own bowl. Everyone loved it. You can add mushrooms and chicken too.

Skipped the cream cheese, and added red peppers vs flakes. Delicious!

This was such a great recipe. I did use Italian season and basil as I had no oregano. I used paprika instead of red pepper flakes. And I also added chunks of chicken. Very flavorful.

Absolutely delicious! I didn't worry about measurements for the herbs/spices, I just added them in at will. I also added more cream cheese than required. I will definitely make this again!

Simple but good

Super delicious. I used a fresh tomato instead of the canned and just added extra water. Added a little sugar to cut the acidity. Threw in some frozen parsley I had on hand instead of spinach and some fresh basil. Super easy and delicious.

Super easy to make! I doubled everything and used a giant 2lb pack of fresh spinach but sautéed it down a bit before adding for even more veggies — worked great! Next time, I’d try adding some sundried tomatoes or turn that into a pesto to give this even more zing.

I added cherry tomatoes and sprinkled more Parmesan on top at the end

Simple and delicious. Bi added Quorn pieces to chunk it up a little.

Super delicious, quick, and easy meal! I had some grilled chicken prepped for the week and I ended up chopping some up and threw that in there as well.
