This homemade potato soup is a budget-friendly recipe that only needs a few ingredients. And since it's ready in 30 minutes, it's perfect comfort food for busy weeknights. Note that this is an old-fashioned potato soup that existed before loaded baked potato soups found their way onto menus at restaurants. It therefore doesn't call for the toppings you may have come to expect from potato soup. But you can go ahead and add them on, if you'd like. Just ladle it into bowls and top with shredded Cheddar cheese, sour cream, chopped cooked bacon, and green onions. Or, leave it plain and eat it the way your (and my) grandmother intended. It'll be good either way!
