Sweet Potato Fries with Avocado Garlic Sauce
My six-year-old daughter is a very picky eater. One of the things she loves is french fries, actually anything with potatoes. She is constantly asking me to buy chips, fries, and tater tots for her. I finally decided to make my own version of sweet potato fries with a hope and a prayer she would try them. The verdict is that she liked the sweet potato fries, but prefers regular french fries. In all honesty the fact that she liked and tried them is a win for me. She didn't even want to try the avocado sauce and had it with ketchup instead. Which is ok in our book because the hubby and I devoured the avocado sauce. You win some you lose some, but you just keep trying when it comes to a picky eater.

Step 1
Peel and wash sweet potatoes. Cut into ½ inch thick fries. In large freezer bag add sweet potato fries, avocado oil, 1 tsp. salt, 1 tsp. black pepper, ½ tsp. onion powder, ¼ tsp. paprika and 2 tsp. cornstarch. Close bag and shake and mix seasoning all over fries. Lay out fries onto cooking sheet. Pre-heat oven to 425˚ degrees and bake for 25-30 minutes or until crispy. For avocado sauce mash avocado, milk, lime juice, salt and garlic powder.
