Ingredients
8 servings
2chicken breasts
skin on bone-in
2 tablespoonolive oil
1yellow onion
chopped
3fresh leeks
white parts chopped
2celery stalks
chopped
1clove of garlic
minced
1 cupoyster mushrooms
roughly chopped
1 cupcremini mushrooms
roughly chopped
1 cupportabella mushrooms
roughly chopped
2 teaspoondried thyme
½ cupwhite wine
7 sprigsrosemary
separated
6 cupschicken broth
2 tablespoonflour
mixed with 2 tablespoon of water
½ cuphalf & half
1 teaspoonsalt
½ teaspoonpepper
fresh cracked
Instructions
Step 1
Pre-heat oven to 425F
Step 2
Roast chicken breasts for 20-25 minutes until cooked through. Set aside to cool.
Step 3
Heat olive oil in a large stock pot. Saute onions, leeks, celery until soft.
Step 4
Add mushrooms, garlic, thyme and wine. Continue to cook until liquid is reduced.
Step 5
Add 6 cups of broth, flour/water mixture and 5 sprigs of rosemary. Cover and simmer for 5 mins.
Step 6
Meanwhile remove meat from chicken and shred into bite-sized pieces.
Step 7
Remove rosemary from the stew and discard. Add half and half and chicken. Season with salt and pepper.
Step 8
Serve in soup bowls garnished with a 1 in” rosemary sprig.
