Fluffy White Buttercream Frosting

Next time I would try King Arthur's brand meringue powder and I'd use shortening instead of butter. Using butter and Wilton meringue powder, it kept wanting to split and was very finicky. I had hoped it would be more foolproof and stable. I do like the taste and texture though.
