Cherry Chip Cookies (Gluten Free & Vegan)

Second time making these cookies. My family loves these. I did double the recipe because they just disappear in a few days. I used regular butter and regular white chocolate chips instead of vegan butter and vegan white chocolate chips.

Was a good recipe, I didn't use gluten-free just plain flour and skipped the xanthan and corn flour. They were great but super sweet, I made with only 300g sugar and found it too much, think this could easily be made with half of he sugar as it overpowered the taste. Also they do not look pink

The cookies were good but there wasn't much cherry flavour. I replaced half of the white chocolate with dark which I think worked well and helped reduce the sweetness

Converted it into a recipe using normal flour instead of gluten free. Didn't need the xanthan gum. Needs some more tweaking because they were a bit too chewy and soft, but my god that flavour is insane! Love em.

So good my friend forgot they were lactose intolerant!!! Little sugary so be sure to have a drink on the side ;) (photo is us trying to redo the autism creature but it failed lol)

It was kinda gooey and soft, it completely fell apart. It tasted wonderful though. Mine turned out like edible cookie dough, so if you mess up, it'll still taste good.

I added strawberries instead of cherries, and as I didn't have any xanthum him, I used coconut flour with almond meal.

The cherries made the dough very sticky and tough to shape, so putting it in the fridge may help prevent this

I did the non-vegan version. I substituted dark chocolate chips for white chocolate chips because that's all I had on hand. Very soft and tasty. Not a crunchy cookie. The whole family loved them.
