Creamy Balsamic Mushroom Bacon Chicken

Add spinach and tomatoes

This was just a bit too rich for my family. The cream sauce with the bacon felt heavy. May have gotten better texture if I had crumbled the bacon over individual bowls instead of incorporating into the sauce.

I used Asiago instead of Parmesan - SO GOOD. It reminded me of Alfredo or Gorgonzola sauce. I reversed the cream and broth and it came out too watery; I may give to just start a small sauté pan on the side to make a plain mushroom sauce for Chris next time.
