Instructions
Step 1
Make the crumble: put all the ingredients in a food processor and pulse it until you get big, moist crumbs. Put it in the fridge.
Step 2
Make the filling: mix all the ingredients together until you get an even cream. Put aside (in the fridge if you plan to let the dough rise overnight) (use hook attachment if using a big mixer, or use a hand mixer)
Step 3
Make the syrup: in a small pot, heat the water and sugar until the water boils and the sugar dissolves (3-4 minutes). Remove from heat and cool.
Step 4
Make the dough and let it rise: in a mixer bowl (with the kneading attachment), add all the ingredients. Knead (medium speed) for ~8 minutes until you get a smooth and soft dough. Cover with a wet towel and let rise in the fridge overnight, or until it doubles in size at room temperature. Rising in the fridge helps with rolling out the dough (less sticky) but if there's no time, let it rise at room temperature and use a little four when rolling out the dough.
Step 5
Roll out the dough to a thickness of 1/2 cm and in the shape of a 40 cm square. On half of the surface, spread 2/3 of the filling and fold it in half, the unfilled side over the filled side (end up with a 20x40cm rectangle).
Step 6
Spread the remaining filling on half of the dough surface. Fold over again (end up with 20x20 cm square). Press down the dough with your hands to flatten slightly.
Step 7
If at this point you feel that the filling is spilling out of the sides, you can put it all in the fridge for a few minutes.
Step 8
Cut the dough with a sharp knife (or a pizza cutter) into 2 cm squares.
Step 9
Butter 2 baking tins. Sprinkle a layer of squares into one of the tins. Sprinkle some crumble. Keep alternating until you've used half the squares and crumble, and then do the same for the other tin. No need for any order/organization in this whole construction process. Cover the tins and let rise (theoretically until it doubles, but also there's a lot of space between this whole mess so it might not look double in volume. Look at the squares on top for comparison instead of the whole cake).
Step 10
Heat the oven to 180C. Bake for 25-30 minutes or until the cakes are ready and until they are golden. Immediately brush the surface with all of the syrup and let it cool until you serve it.
Variations
Step 11
Instead of the cacao filling you can generously use a chocolate spread (or other spreads you like)
Step 12
You can leave out the cacao and instead add another tablespoon of cinnamon and make a cinnamon cake. In this case, the recommendation is to use brown sugar instead of sugar.
Step 13
Instead of a crumble you can use chocolate chips or chopped chocolate of any kind (dark, milk, white, whatever)
