Instructions
Step 1
Beat butter and sugar together until butter is fluffy and sugar is almost dissolved into the butter.
Step 2
(optional) dissolve baking soda in 1tbs hot water, to release C02 and create a chewier cookie. Set to the side.
Step 3
While the butter mixture is beating combine flour, salt, garam masala, cornstarch and baking soda (if you did not dissolve the baking soda)
Step 4
Add eggs one at a time and vanilla to butter mixture, beat until eggs are mixed in and not yolky -- about 20 seconds. Add dissolved baking soda if using.
Step 5
Add the dry base to the wet mixture. Mix only until the flour is dissolved, being careful not to over mix. Make sure to scoop batter off the sides as it mixes.
Step 6
Fold in chocolate chips and any extra fillings. Let the dough rest in the fridge for at least an hour, preferably 24 hours and up to 72.
Step 7
Remove dough from fridge, set oven to 350f. Scoop mounds of dough with ice cream scoop onto baking sheet (small golf ball size), making sure to turn horizontally any chocolate pieces that are poking up; it will make for a more attractive cookie.
Step 8
Sprinkle lightly with sea salt and bake until golden brown but still soft, 12 - 14 minutes (12 for smaller balls, 14 for larger balls). Remove, and let them finish cooking on warm baking sheet for at least 5 minutes.
