Step 1
In a blender, combine the bananas, milk, heavy cream, granulated sugar, vanilla extract, lemon juice, and a pinch of salt. Blend until smooth. Transfer the banana mixture to a medium saucepan and cook over medium heat, stirring frequently, until it just begins to bubble. This should take about 5 to 7 minutes. Remove the saucepan from the heat and let the banana mixture cool to room temperature. Once it has cooled, cover it and refrigerate for at least 2 hours, or overnight for best results.
Step 2
After chilling, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. In the last few minutes of churning, add the crumbled vanilla wafer cookies to the ice cream maker so they can be evenly distributed throughout the ice cream. Once the ice cream has reached your preferred consistency, transfer it to an airtight container and freeze for at least 4 hours before serving.
