Instructions

Step 1
Preheat the oven to 180C.
Step 2
In a mixing bowl, combine the almond meal, egg white, lemon zest, a pinch of salt, and sugar.
Step 3
Divide the dough into 8 pieces, roll them into balls, and coat them with flaked almonds.
Step 4
Flatten the balls slightly to a thickness of about 2cm. Place them on a prepared baking tray lined with parchment paper.
Step 5
Bake in the preheated oven for 15 minutes or until lightly golden. Allow them to cool for 5 minutes before transferring.
Step 6
Once cooled, dust the cookies with icing sugar.
