Instructions
Step 1
Blanch brussel sprouts in boiling water 2 minutes. Then strain and flash in ice water. Remove and let stand in colander.




Step 2
Cook bacon bits for 2 minutes then add shallots, cook 1 more minute and add Brussel sprouts and combine.


Step 3
Transfer to a baking sheet and, cook for 10 minutes at 350 in the oven.


Step 4
Remove from the oven and garnish with freshly grated pecorino cheese.
