½ cupalmond flour
¼ cupcoconut flour
⅜ cupsall-purpose flour
gluten-free, if necessary
1 tablespoonground chia seeds
1 heaping Tablespoonmetamucil
1 teaspoonbaking soda
½ teaspoonsalt
⅛ cupsugar
or sugar alternative
4 Tablespoonssugar-free yogurt
2 tablespoonCoconut oil
1egg
large
1 ½ teaspoonvanilla extract
1 teaspoonwhite vinegar
1 cupwater
or milk
Instructions
Step 1
Heat oven to 350
Step 2
whip the egg, melted oil, yogurt and sugar
Step 3
mix all dry ingredients
Step 4
add to the wet. then add vanilla, water, and vinegar and mix just well enough.
Step 5
in a greased square pan, bake 25 min. or until toothpick comes out clean.
Step 6
top with sugar-free low-fat yogurt and fresh berries
