Strawberry gingerbread cookies- a soft gingerbread cookie made with molasses, and different spices topped with a fruity and tangy strawberry cream cheese glaze, my mouth is watering just writing this! If you don't know already, then let me tell you that strawberry and gingerbread are two flavors that are meant to be!

Instructions

Step 1
In a large bowl sift together the flour, spices, baking soda and salt. Mix and set aside.
Step 2
In a separate bowl Mix together the molasses and hot water. Wait for 1-2 min to let it cool slightly. Add in the sugar, oil and egg. Mix until combined.
Step 3
Add the wet mixture into the dry and fold together using a spatula. Cover with plastic wrap and chill for 2 hours.
Step 4
Using a cookie/ice cream scoop, scoop eqaul amounts of dough and place on a lined baking tray, with at least an 2 inches of space between them.
Step 5
Bake in an oven preheated at 175 degrees Celsius (350 F) for 13-15 minutes. Let them cool completely.
Step 6
Glaze: In a medium sized bowl whisk the cream cheese till smooth. Add in the powdered sugar and mix until fully incorporated.
Step 7
Add in the strawberry jam, puree and salt and give it a mix. Add a few drops of pink food coloring and mix.
Step 8
Transfer glaze into a piping bag and pipe onto the gingerbread cookies in any design you'd like.
Step 9
The strawberry gingerbread cookies are ready, all you have to do now is...….enjoy!
