Instructions
Step 1
Wash and peel radish. Cut off ends.
Step 2
Cut radish into 1/4” rings. Cut each ring into quarters.
Step 3
In a clean jar or food storage container, add radish.
Step 4
For the brine, combine rice vinegar, rice wine, soy sauce and sugar. Mix well till sugar is completely dissolve.
Step 5
Pour brine into jar. Close the lid. Turn jar over a few times. Let sit for 1 hour in room temperature.
Step 6
Turn jar over and let sit upside down for another hour (make sure the lid is closed tightly so brine won’t leak).
Step 7
Radish will release liquid and most or all slices should be immersed in brine now. Open the lid, press radish down to tightly pack the jar, making sure every radish sliced is immersed in brine before storing in the fridge. (Optional: use a fermentation weight to push radish down.)
Step 8
It will be ready to eat in 48 hours. Enjoy!
