The Brine
Instructions
Step 1
Wash, peel and cut radish into 2 inch slices.
Step 2
Mix in salt and sugar and let sit for 30 minutes.
Step 3
Rinse with cold water and drain.
Step 4
For the brine, blend Korean pear, apple, onion, garlic, ginger & 1 cup of water. Strain using a cheese cloth.
Step 5
Add salt and water. Mix well.
Step 6
In a clean container, add radish, green onions, and chili pepper.
Step 7
Pour in the brine.
Step 8
Close the lid. Let sit in room temperature for 1-3 days then store in the fridge.
Step 9
It’s ready to eat but personally I think it tastes better after 1 week (from the time it’s made).
