Step 1
Mix all the dry ingredients for the cookies, then pour in the water
Step 2
Swirl the bowl so that the water covers the oat fiber, then let it sit for a few minutes so that the fiber can absorb the water.

Mix until you have a doughball
Step 4
Split the dough into 10 pieces, then shape them into cookies
Step 5
Line a baking tray with parchment paper, then bake for 250F for 20-25min. The cookies will be soft coming out of the oven, but will harden once cooled.
Step 6
To make the cream, mix powdered sweetener (if you only have granulated sweetener, blend it in a processor or blender) with a few drops of vanilla and a tiny bit of almondmilk, until it is a creamy consistency. If you add too much milk, add more sweetener.
