Creamy Mustard & Chive Pork Steaks with Crushed Potatoes

Instructions
Step 1
Heat a large frying pan. Pat dry the pork steaks and rub them with a little vegetable oil and salt on both sides. Add the steaks to the pan, cooking them on one side for 3 minutes.
Step 2
Add the potatoes to a heat proof bowl and cover with cling film. Pierce the film and microwave for 4-5 minutes or until the potatoes are tender.
Step 3
Top and tail and leeks and cut into chunks. If using fresh chives, dice finely.
Step 4
Flip the steaks and cook for a further 1 minute. Dissolve the stock cube in 150ml of boiled water. Add this and the leeks to the pan. Cover and cook for a further 4 minutes.
Step 5
While the steaks are cooking, add butter to the potatoes with salt and pepper and crush with a fork.
Step 6
Add the mustard, soft cheese, and chives to the pan. Cook uncovered for a further 1 minute or until the sauce has thickened. Season generously with pepper.
