Bacon, Corn + Shallot Grilled Cheese with Garlicky Cilantro Lime

Ingredients

2 slicessourdough bread
or bread of choice
butter
softened, for brushing on bread
1corn on the cob
grilled until tender and kernels cut off of the cob
1shallot
sliced into rings
extra virgin olive oil
for cooking
4 slicesbacon
cooked crispy
cheddar cheese
shredded, measure with your heart
mozzarella cheese
shredded, measure with your heart
For the garlicky cilantro lime sauce
Instructions
Make the sauce
Step 1
First, make the garlicky cilantro lime sauce. Simply add all the ingredients to a small bowl and mix. Adjust seasoning and add more garlic if you wish.
Grill veggies and cook the bacon
Step 2
Heat a frying or grill pan to medium high heat. Coat the corn cob and sliced shallots with a little bit of olive oil and cook them both in the frying pan. The corn is finished when it's tender and starting to char and the shallots are finished when softened and starting to char/caramelise.
Step 3
Remove corn cob from pan and slice the corn off of the cob. Set the corn and shallots aside until it's time to assemble sandwich.
Step 4
You can cook the bacon however you'd like - bake it on a baking tray, use a frying pan or an air fryer. Just make sure you cook it nice and crispy. I found it got a bit messy trying to cook it in the same pan as the shallots and corn, but you can give that a try if you wish to keep it all in one pan!
Assembling and grilling the sandwich

Butter the sides of the bread that will be grilled. Spread the cilantro sauce on one half of the inside of the bread and then pile on the cheese to both sides.
Step 6
Layer on the crispy bacon, grilled shallots and corn kernels. Top with the remainder of sauce and squish sandwich together carefully.
Step 7
Now transfer the sandwich back into the same frying pan you cooked the veggies in. You can give it a wipe down before if you wish!
Step 8
Grill in a frying pan over a medium heat until bread is golden and crunchy and cheese has melted thoroughly. Cut in half and enjoy with a fellow corn lover!
