Instructions

Step 1
Preheat oven to 450
Step 2
2. Brown beef by drizzling olive oil into oven-safe pot and heat on stove. Pat beef dry and brown on all sides. Remove from pot.

3. Add onion, carrots, garlic and cook until softened

4. Add beef back into pot and sprinkle flour. Mix till evenly coated and put in oven for 4 mins. Stir and bake for 4 mins. Reduce heat to 325
Step 5
5. Put pot back on stove and pour in wine with enough beef stock to cover meat. Add tomato paste, thyme, and crumbled bay leaf.
Step 6
6. Simmer, then cover pot and put in oven for 3 hours
Step 7
7. Skim off orange fat from top
