Ingredients
2 servings
2boneless skinless chicken breasts
1juice of lemon
1zest of lemon
2cloves of garlic
minced
2 tablespoonsolive oil
1 teaspoondried oregano
salt
to taste
pepper
1 cupquinoa
cooked
1 cupcherry tomatoes
halved
½ cupcucumber
diced
¼ cupred onion
finely chopped
2 tablespoonsfresh parsley
chopped
2 tablespoonsfresh mint
chopped
0.5juice of lemon
2 tablespoonsextra-virgin olive oil
Instructions
Step 1
In a bowl, combine lemon juice, lemon zest, minced garlic, olive oil, dried oregano, salt, and pepper. Mix well.
Step 2
Place the chicken breasts in a shallow dish and pour the lemon herb mixture over them. Allow the chicken to marinate for at least 30 minutes in the refrigerator.
Step 3
Preheat your grill to medium-high heat.
Step 4
Grill the chicken breasts for about 6-7 minutes per side until cooked through and nicely charred. Discard any leftover marinade.
Step 5
While the chicken is grilling, prepare the quinoa salad. In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, mint, lemon juice, and extra-virgin olive oil. Toss well.
Step 6
Once the chicken is cooked, let it rest for a few minutes, then slice it into thin strips.
Step 7
Serve the grilled lemon herb chicken over a bed of quinoa salad.
