Step 1
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.

In a bowl, combine the chopped walnuts, chopped pistachios, ground cinnamon, and ground cloves. Mix well and set aside.

Place one phyllo sheet in the greased baking dish, brushing it generously with melted butter. Repeat this process, layering 8-10 sheets of phyllo pastry, brushing each layer with butter.

Sprinkle a generous amount of the nut mixture (about 1/3 cup) evenly over the phyllo pastry layers.

Repeat the layering process with 4-5 sheets of phyllo pastry and the nut mixture until you have used all of the nuts. Make sure to brush each phyllo sheet with melted butter.

Finish by layering the remaining sheets of phyllo pastry, again brushing each sheet with butter. Brush the top layer generously with butter as well.

Using a sharp knife, carefully score the top layer of phyllo pastry into diamond or square shapes, being careful not to cut through the bottom layer.

Place the baklava in the preheated oven and bake for 45-50 minutes or until golden brown and crisp.

While the baklava is baking, prepare the syrup. In a saucepan, combine the granulated sugar, water, honey, fresh lemon juice, and cinnamon stick. Bring the mixture to a boil, then reduce the heat and simmer for 10-15 minutes until the syrup slightly thickens. Remove the cinnamon stick and let the syrup cool.

Once the baklava is baked, remove it from the oven and let it cool for a few minutes. Pour the cooled syrup evenly over the hot baklava, allowing it to soak through the cuts.

Allow the baklava to cool completely at room temperature. This will allow the layers to set and the flavors to meld together.
