Ingredients

1 cupunsalted butter
softened
1 cupwhite sugar
1 cupbrown sugar
1egg
3 Tbsprose water
½ tsplemon zest
2 cupsall-purpose flour
½ cupalmond flour
1 tspbaking soda
1 tspbaking powder
1 tspsalt
½ tspcardamom
2 cupsconfectioners sugar
1 tsplemon zest
¼ cuplemon juice
2 Tbsprose water
½ tspcardamom
½ tsppink food dye
optional
3 Tbspdried rose petals
optional
3 Tbsppistachios
crushed, optional
Instructions
Step 1
In a large bowl, cream the butter for one minute, until slightly fluffy, add in sugars and continue creaming for another minute.
Step 2
Add in the egg, rose water, and lemon zest, then beat until combined.
Step 3
Fold in dry with a spatula, the dough should be slightly sticky.
Step 4
Scoop onto a prepared baking sheet and bake at 350 degrees Fahrenheit for 10-15 mins, or until edges are golden.
Step 5
Remove the cookies from the oven and let them cool on a wire rack as you prepare the glaze.
Step 6
For the glaze In a small bowl mix together the sugar, lemon zest, lemon juice, rose water, cardamom, and food coloring until fully combined. The mixture should not be too thick, or too liquidy.
Step 7
Drizzle your glaze over the cooled cookies on a wire rack with parchment paper underneath (It will catch the glaze that falls over the sides), and sprinkle the dried rose petals and pistachios on top.
