Step 1
Rinse the rice under cold water until the water runs clear. Combine the rinsed rice, almonds, and cinnamon stick in a large bowl. Add 2 cups of water, cover the bowl, and let it soak overnight or at least for 8 hours.
Step 2
After the soaking time, pour the mixture into a blender, including the cinnamon stick. Add strawberries to the blender as well.
Step 3
Blend on high until you have a smooth mixture (approximately 2-3 minutes).
Step 4
Using a fine-mesh sieve or cheesecloth, strain the mixture into a pitcher, pressing with a spoon to extract as much liquid as possible. Discard the solids.
Step 5
Add the sugar, vanilla extract, whole milk, condensed milk, and evaporated milk to the pitcher. Stir until the sugar has completely dissolved.
Step 6
Add the remaining 2 cups of water to the pitcher and stir to combine.
Step 7
Taste and adjust the sweetness, if necessary. If you prefer your horchata more diluted, you can add a bit more water.
Step 8
Chill the horchata in the refrigerator for at least 2 hours before serving.
Step 9
To serve, stir well, then pour the horchata over ice in glasses. If desired, garnish with additional cut-up strawberries or a sprinkle of ground cinnamon.
