This lemon curd is tangy-sweet perfection! There is only 6 ingredients and so easy to make. Wayyyy better than store bought IMO. I like to use one whole egg plus 2 yolks which will give you a denser curd and my personal favourite.

Step 1
1. In a double boiler, whisk all the ingredients except the butter over medium heat.

2. Whisk constantly until the mixture reaches between 160 - 170 degrees F or until the mixture coats the back of a wooden spoon.
Step 3
3. Lower the temperature to low and whisk in the butter until melted and combined.
Step 4
4. Strain your curd through a fine mesh strainer into a bowl for an extra smooth texture.
Step 5
5. Press a later of plastic wrap onto the surface of the lemon curd and refrigerate for at least 1 hour.
