Instructions

Step 1
Preheat oven to 350°
Step 2
Mix the cooking oil with the seasoning in a small bowl.
Step 3
Coat a baking dish with 2 tablespoons of the oil mixture.
Step 4
Slice the onion and place the slices in a single layer in the center of the baking dish
Step 5
Tenderize the chicken breast until it's flat, and put it on top of the onions.
Step 6
Mix the remaining oil and half of the vodka sauce. Pour it over the chicken.
Step 7
Cook for 20 minutes.
Step 8
Add the mozzarella, and bake for another 10 minutes.
Step 9
Plate, and top with the remaining vodka sauce.
