Instructions
Step 1
In a bowl add your very ripe avocados and mix them with sugar with a hand mixer.




Step 2
Incorporate eggs and mix for 45 seconds.


Step 3
Add flour and baking powder and mix with a wooden spoon for a couple of mins or until you have a smooth dough.


Step 4
Transfer your dough in a rectangular “plumcake” pan and bake for about 45-50 mins (175C/350F). If the top of your bread start becoming too dark while baking, simply cover with aluminium foil. Buon appetito!
