High Fiber Healthy scoop cookies

Healthy high fiber cookies. These are more like little balls of muffin or banana bread. I don't claim these to be the ultimate anything. It's just something I like and it seems to fit into my lifestyle of dealing with heart problems. This is a modification of a recipe I found online. I have since lost the original source since I have been making them from memory for some time. Instructions

Step 1
Add all ingredients except the baking soda to a food processor and process to combine well. Mixture should be wet but not runny. If too runny add a bit more cereal.
Step 2
Add the baking soda and pulse to mix. It's quite alright to leave this out and doing so will give you a nice dense banana break like scooped cookie.
Step 3
Use a small cookie scoop to place cookies spaced about 1/2 inch apart on a properly prepared cookie sheet. Use parchment paper or a silicone mat or simply spray your sheet with cooking oil.
Step 4
Bake at 350 for 18-22 minutes. All ovens vary so you must determine the best time and temp. My air fryer oven is set at 340 for 18 minutes. If you don't know the best settings for your oven you will have to experiment.
Step 5
Remove when done. Allow to cool for 10 minutes then move to a rack to cool completely.
Step 6
Notes: You can leave the banana out. They become less dense and the baking soda has more effect making them more airy. You may substitute apple sauce or an avocado for the banana. Each substitution will effect the texture, You may add nuts or chocolate chips or different spices. It's quite a blank slate and a good base for modifications. If you have a sweet tooth add your sweetener of choice, but they are pretty sweet with the banana and prune juice. It's all about personal taste.
