Hey there, foodie friends! 🌞 Today, I'm sharing one of my absolute favorite treats: an oh-so-dreamy Mandarin Almond Cake, made with love and lots of yummy mandarins! 🍊 Bonus points because it’s Gluten Free for all of our GF friends.

Step 1
Firstly, crack those eggs into your blender (yes, blender!) and add that sweet sugar. Give it a good wizz for about 2 minutes until it's as pale as a winter morning ☁️
Step 2
Next, throw in those mandarins - whole! Yes, whole! - and wizz again for a few minutes until they've given up their last secret 🌪️
Step 3
Add in your almond meal and gluten-free baking powder, and blitz again just to mix everything together.
Step 4
Pour this velvety mixture into a lined cake tin. Bake it at a cosy 180C for 40 minutes, or until it springs back when you lightly touch the middle of the cake 🍰
Step 5
Want to make it even more special? Line your baking tray with mandarin segments before you pour in the cake batter for a delightful surprise. Or smother your cake in a cream cheese frosting made with - you guessed it - more mandarin! Mix together 200g cream cheese, 3 cups icing sugar and the juice and zest of a mandarin. 🎂
