Ube Crinkle Cookies
Ube crinkle cookies that are delicious anytime during the year! Ube has also grown in popularity in the U.S. in the past few years, so why not show case and add to that? Ube is also something that reminds me of my childhood and growing up. I’ve always loved when my mom would steam up some fresh ube sweet potato. 🥰

Instructions
Step 1
Crack 2 eggs into your mixing bowl and whisk until beaten. Add your oil, then whisk until combined. Add in your sugar and combine until smooth.

Strain in your flour, salt, baking powder, and baking soda and mix well until combined

Warm up your ube jam in a separate small microwaveable safe bowl to loosen. Add in a teaspoon to 2 teaspoons of milk to loosen it up some more/cool it down. Then, add to your batter and combine

Add in your ube extract. This part might be a little tricky because the dough will become very tough to work with. I suggest getting gloves and mixing with your hands to combine all the ube extract until your dough is purple all the way through.

Cover and chill in the fridge for 15 minutes, can be chilled for up to 2 hours. Remove and start rolling your cookies into 1 to 2 inch balls (however big you like your cookies). Coat them in powdered sugar and place on parchment lined sheet tray. Bake at 350 degrees for 13 minutes. Remove, let cool for a little and enjoy 💜
