Orange Upside-Down Cake

This orange upside down cake is SO good, and even pretty healthy! It’s made out of oat flour so it’s naturally gluten free, and has more fiber. If you cycle sync- this is great for your follicular phase!

Instructions

Step 1
Preheat the oven to 350°. Grease a 9 inch cake pan, then line with parchment paper, and then grease the parchment paper.
Step 2
Peel your oranges and remove the pith. Then slice the oranges into 1/4 inch thick disks.
Step 3
Melt coconut oil, or butter, and honey in the microwave or on stovetop. Pour the oil and honey mixture onto the bottom of the cake pan, then add the orange disks on top of the caramel. Set aside
Step 4
Make the cake batter by whisking together the dry ingredients. In a separate bowl, beat the egg then whisk in maple syrup, olive oil, vanilla, orange juice, and orange zest. Add wet ingredients to the dry ingredients and beat to combine
Step 5
Pour the batter over the oranges
Step 6
Bake for 45-50 min or until golden and an inserted toothpick comes out clean.
Step 7
Let rest for 5 min before removing from cake pan. Let cool for 10 more min before cutting
