Ukrainian waffle cake
This is a sweet I’ve had in elementary during an international potluck, where kids would bring 1 dish that they enjoy from where they’re from. This was one of my top favorites 🤌🏼

Instructions
Step 1
You can use cooked condensed milk, or store bought dulce de leche. To cook condensed milk, preheat the oven to 425 degrees, open up the can of condensed milk and put it in a small pie or cake dish, wrap the top tightly with aluminum foil and place it in a bigger baking dish with hot water (creating a water bath). Then bake it for 1 hour and 45 minutes. Remove and let cool to room temp and chill in the fridge for 30 minutes.

Combine your cooked condensed milk/dulce de leche your softened butter, and lemon juice in an electric stand mixer (can use electric hand blender as well). Beat in high speed for 3 minutes

Step 3
Spread the cream on the wafers using a leveling spatula, it’s okay to not get every square, but make sure there is enough so that way the wafer above can stick to the wafer below it.

Step 4
Place cake under a heavy cutting board with a big bowl of water on top for more weight, and let it sit for at least 1 to 2 hours. Remove the weight and slice the cake into wafer bites and enjoy!
