Chocolate Babka

Braided chocolate filled bread… what more could you want? Vanilla ice cream? Now we’re talking 👍 The dough recipe for this is the same recipe I use for my sticky buns. Different filling and finish but the same delicious result.

Instructions

Step 1
1. Mix warm milk, yeast and 1st amount of flour together to form a sponge. Cover and allow to proof in a warm place until double in size.

2. Using a paddle cream butter, sugar and salt till light in color.

3. Slowly add eggs.
Step 4
4. Switch from the paddle attachment to a dough hook and add the sponge and remaining flour.

5. Mix low speed for 8mins. Scrape down sides and bottom of bowl as needed.

6. Mix med speed for 4mins

7. Remove from mixer and place into a lightly greased bowl. Cover and place in fridge overnight.

8. Once dough has rested begin to roll out into a long rectangle.

9. Dust off any extra flour and pour on cooled chocolate filling and spread evenly across surface.

10. Start rolling dough towards you to create a long cylinder. Take your time and try to maintain a tight roll

11. Cut dough lengthwise down the middle leaving one end intact. Keeping the cut side up with the layers exposed work your way down and maintain an even braid.

12. Cut and portion into a prepared pan and allow to proof till doubled in size.

13. Bake 325 until golden brown (30-40min)

14. *Optional* When they look finished brush with a vanilla simple syrup and allow to bake an additional 3-5min.

15. Allow to cool to the touch and remove from pans. If any chocolate filling remains pour on top and enjoy.

Chocolate Filling

Step 16
1. Scale all ingredients into a bowl and place on a double boiler to melt.

2. Once the chocolate has melted begin whisking in the middle of the bowl in a tight circular motion.

3. As the ingredients begin to come together and the ganache starts to form slowly expand to the side of the bowl.

4. Allow to cool to room temp.
