Instructions
Step 1
Preheat oven to 350 degrees F. Coat a 9×13 baking pan with nonstick spray.
Step 2
Add all the ingredients to a mixing bowl and combine until incorporated and smooth – don't over mix or whip.
Step 3
Pour batter into prepared pan in an even layer.
Step 4
Bake for about 30 minutes or until slightly golden and a tester comes out clean.
Step 5
Let cool completely, then cut into squares. Top with piped whipped cream or lightly dust with powdered sugar, if desired.
Step 6
OPTIONAL coconut flakes. Feel free to stir 3/4 of a cup of sweetened coconut flakes into the batter. Coconut and pineapple love one another!
